Grilled Bruschetta

I love food! If you have been reading this blog or follow me on any social media this is a well known fast. I am not a very good cook, one of my new years resolutions was to become a better cook. Throughout the year I have attempted many recipes and I am actually getting better. Bruschetta is one of my favourite appetizers, I use this recipe all the time:

Here is what you will need:
<> 2 medium tomatos, chopped
<> 2 tables spoons chopped basil leaves
<> 2 cloves garlic, chopped
<> 1/2 teaspoon cracked black pepper
<> 2 tablespoons red wine vinegar
<> 3 tablespoons olive oil
<> Garlic Texas toast (use Parmesan toast instead if you don't want a lot of garlic)

Directions:
1. Stir the oil, vinegar, garlic, tomatoes, black pepper, basil leaves in a small bowl. mix and let the mixture sit for 10-15 minutes
2.Lightly oil the grill rack and heat to medium
3.Grill the toast slices for two-three minutes (flipping them mid time), until they are browned
4.Top with mixture and serve immediately.
