Raspberry Oat Bars

I love desserts, which only messes with new found plan of getting healthy. Baking is better then buying sweets and dessert right? This raspberry oat bar is one of my favourite go to recipes, mainly because I usually have all the ingredients and its very simple to make.


  • 2 cup all-purpose flour 
  • 1/2 tsp baking soda 
  • 1/4 tsp salt
  • 2 cup oats 
  • 1 cup packed light-brown sugar 
  • 1/2 cup unsalted butter, softened 
  • 1 cup raspberry jam
  • 1/2 fresh raspberries

  • Preheat oven to 350 degrees. Line an  by 13-inch baking dish with aluminum foil, leaving a 2-inch overhang of foil on two sides so its easy to pull out. Grease foil.
  • In a mixing bowl, mix together flour, baking soda and salt. Stir in oats and brown sugar, and use clean fingertips as needed to break up brown sugar clumps. Add melted butter, and using fingertips, work butter into mixture until evenly moistened.
  • Add half of the oat mixture to the prepared baking dish and press into an even layer. Spread raspberry jam into an even layer over oat layer. Sprinkle top evenly with remaining oat mixture, then slightly press into jam layer.
  • Bake in preheated oven until golden brown, about 30 minutes. Remove from oven and allow to cool completely before cutting into squares.

You can also make this oats bar with pretty much any fruit jam and fresh fruits. What is your go to recipe when you are strapped for time?
