Roasted Vegetable and Shrimp Tacos

I have been on a healthy-ish kick lately. I absolutely love cooking, but with two jobs, blogging and pretending to have some sort of social life I don’t always have time to commit hours to cooking.  Its not your traditional taco, but this easy recipe requires just 30 minutes (or less) and includes so many delicious, and healthy ingredients.


Here is what you will need:
10 tortillas
chopped parsley
1 tbsp paprika
1 tbsp vegeta
20 large shrimp (or as many as smaller ones you want)
1 cup cauliflower chopped
2 peppers chopped
1 large carrot chopped
1 lemon
cilantro chopped


How to make it:
Combine all your spices. Using half your spices toss your vegetables, and in a separate bowl do the same to shrimp.
Pre heat the oven to 375 and arrange your vegetables and shrimp on a banking sheet. Bake for 20-25 minutes.
In mean time make your salsa verde.
Warm your tortillas in the microwave, top with your ingredients and sauce, top with cilantro (optional) and serve with lemon (optional)
enjoy.
