Easy and Delicious Chicken Rice Bowl

We are still on a healthy(er) kick around here. The eight week challenge at work has forced me to meal plan and make better choices. This recipe is super easy to make, and you can mare enough for few days all in one go. My problem with most things is that I get bored but this bowl is easily customizable - and if you wanna turn it up a notch use quinoa instead of rice.
Cook your rice as you usually would, we used wild and brown rice mix.
dice and cook chicken breast with spices of choice. We used salt, pepper, garlic powder and a little paprika.
You will need pico de gallo, feta cheese, black beans and tzatziki for toppings. This is where can customize it and top it with any ingredients to keep your lunch exciting.
