Brie and Date Grilled Cheese Crostini

Food is my favorite – but you prob already know that about me. I cook often, I would say 4-6 times a week. In my culture food is what brings everyone together so I am always on the hunt for new recipes that are quick, easy and delicious. I love grilled cheese sandwiches, but since I am no longer a child I decided to make an adult version. Here is my take on it – its delicious and doesn’t take long to make. 










What you need:
  • 1 cup of pitted dates
  • 1/2 water
  • 1 baguette, sliced 
  • 1 tbsp if thyme
  • 250 grams of brie, sliced thinly 
  • 1/2 butter divided 
  • salt and pepper

How to make it:
  • melt 2 tbsp of butter in a small sauce pan over medium heat.
  • add dates, water and honey  and cook for 10 minutes or when the mixture is soft and thick.
  • spread mixture over half the baguette slices and sprinkle with thyme
  • top each baguette with a slice of brie, salt and peeper to takes
  • place other baguette slices on top to make a sandwich
  • microwave remaining butter and brush both sides of bread 
  • heat an a non stick frying pan on medium, cook crostinis until bread is golden. (1-2 minutes per side)
  • serve and enjoy
