Holiday Meringues

I am all about dessert that can double as gifts this time of the year. These Meringues aka Puslice/Bilo pa nema were a huge hit. I did a test batch and my took them to work and they disappeared in matter of couple of hours. While it may seem daunting, a basic meringue is nothing more than a mixture of beaten egg whites and sugar and lots of patience.

Here is what you need:

  • 4 egg whites
  • 280 gr of sugar crystal
  • Pinch of salt
  • 1 tsp. Peppermint extract
  • 2 crushed peppermint candy canes
  • 50 gr vanilla sugar
  • Ton of patience

How to make it:

  • Beat egg whites in medium bowl with electric mixer until frothy. Add vanilla sugar, peppermint extract  and than gradually beat in sugar, 1 tbsp  at a time, until sugar is dissolved and stiff, glossy peaks form.
  • Preheat the oven to 180.
  • On a baking sheet spoon out or pipe the meringue mixture, keep couple of centimeters apart on the banking sheet. Top with crushed candy canes.
  • Bake for 45-50 minutes.
  • Let cool fully before serving.
Few additional helpful tips:
Use cold eggs when you are separating eggs.

Be sure no yolk slips in with the white when separating the eggs. Yolks in with the egg whites will prevent the whites from beating to a good volume.

Kitchen aid stand mixers are saviors - put stuff in, let it mix 7 minutes longer than you think is done.
