Instant Pot Chicken Teriyaki

Friday, May 15, 2020

My parents bought me an InstaPot nearly a year ago, I never used it till 4 weeks ago I decided that I needed a dinner in a pinch. I googled bunch of recipes but this one called for most ingredients I had at home. The original recipe called for chicken broth and brown sugar and teriyaki sauce, however I modified it a little bit to what I think it would be better suited to my family.
What you will need:
  • 1 lbs chicken breast
  • 1 cup low sodium soy sauce
  • 1 cup teriyaki sauce
  • 3 garlic cloves, minced
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 shallot, sliced
  • 2 medium carrots, cut in medium pieces
  • 1 table spoon worcester sauce
How to make it:

  • In a bowl combine chicken broth, teriyaki sauce, soya sauce, worcester sauce and garlic cloves.
  • Add chicken and vegetables to sauce, and toss to combine.
  • Pour chicken mixture into insta-pot, seal the lid of the Instant Pot according to the owner's manual and cook on HIGH pressure for high 14 minutes.
  • When the timer is done, allow the pressure to release naturally for 5 minutes, then carefully vent to release the remaining pressure (consult your owner's manual for more specific instructions)
  • Serve over hot cooked rice and spoon extra sauce if desired.
Enjoy.
