Crispy Turkey Bacon Hashbrowns

A thing I realized while in quarantine/self isolation is that out of all things I miss - I miss brunch the MOST. Since the girls and I decided that I can't just be eating my feelings (took us 3 weeks to get here, but at least things are looking up now!), we are all doing intermittent fasting so by time I get to eat (1-9PM) brunch is perfectly timed. I love potatoes ( which according to Steph are the devil) I made these hash browns as a treat for myself for working out 5 times this week.
What you will need:
2 russet potatoes
2 tabs olive oil
2 tabs butter, melted
3 slices of turkey bacon, miniced
salt and pepper to taste
1/3 cup mayo
1/3 siracha
1 clove garlic, miniced
