Roasted Tomato and Garlic Soup

Homemade roasted tomato basil soup with fresh tomatoes, garlic, olive oil and caramelized onions is my favorite. It's delicious, flavorful and the best on a cold rainy day.
What you will need:
Tomatoes, lots of them
two garlic cloves
1/2 onion
olive oil
salt and pepper
1 cup of vegetable stock
½ teaspoon dried oregano
1 teaspoon vegeta
garlic toast and parmigiano cheese for serving.
How to make it:
Heat oven to 375. In a oven safe dish put tomatoes, garlic and sliced onions. Drizzle olive oil, generously season salt and pepper, bake for 30-40 min.
In a saucepan add roasted vegetables (make sure to push out garlic out of shells), add vegetable stock, dried oregano and vegeta. Bring to boil.
Reduce the heat to low and let sizzle for 10 minutes.
Using an immersion blender, blend soup well.
To serve, garnish with parmesan cheese and garlic croutons, if desired.
