Healthy Banana Chocolate Chip Muffins

There are my favorite, go to muffins and are always super soft and moist. I have added protein powder but you can totally do without. They are fairly full proof and always a hit with my family.

What you will need:
3 medium very ripe bananas
2 egg
1/3 cup milk
1⁄2 cup granulated sugar
1⁄2 cup protein powder
1 1⁄2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 -3 tablespoons chocolate chips
1/2 of fruit.
How to make it:
Preheat oven to 350 degrees.
Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.
In large bowl, mash bananas with fork.
Whisk in egg, milk, and granulated sugar,.
In separate bowl, combine flour, protein powder, baking soda, and salt.
Add flour mixture to banana mixture and combine well.
Spoon equal amounts of batter into 12 muffin cups.
Drop in fruit or chocolate chips
Bake 20 minutes or until toothpick inserted in center comes out clean.
Allow to cool slightly in pan, then remove to wire rack.

  1. YUM - muffins are one of my favorite things to make, as I can save leftovers in the freezer for quick breakfasts. Looks like a great recipe!
